Almond Cheesecake with Spiced Pear Compote
One of my favorite French desserts is a Pear and Almond tarte. I think the balance of the almond and the delicate fruit of the pears is so beautiful. The only dessert I’ve had since my surgery was a pear and almond tarte from Gourmandise here in Salt Lake City on my Valentine’s day date with my handsome husband. I ate it slowly and suffered gladly through the nausea and pain it caused. This is why now I will only have one or two bites of any dessert, mostly so I can test to make sure the taste is what I’m going for. And this Almond Cheesecake with Spiced Pear Compote has every aspect of the pear and almond tarte I had 4 months ago.
The cheesecake is probably the creamiest I’ve ever made. The only one that comes close to the intense richness and density is the Chocolate Mint Cheesecake. A good cheesecake should always be dense, but some reach a new level of luxury that is hard to take. This recipe should be eaten in small pieces… if you can resist the urge to overindulge. In my old days, I’d probably eat this cheesecake for breakfast, lunch, & dinner. Delicious. Absolutely delicious.
Variations to Try
The great thing about this Almond Cheesecake with Spiced Pear Compote is that it is very versatile. Almond goes well with so many things and you can literally top this cheesecake with all of them. Almond pairs well with apples, berries, coffee, caramel, and sweet citrus. Create a different take on the same dessert to share with those who like different things.
Because I don’t eat (much) sugar, I make these things for those that I love My husband, my children, our family and friends.
