I love a good caprese salad. Light and refreshing, no other salad really compares to the simple flavors. Today, however, I wanted something a little extra to go with the ribeye steaks I was serving to my family. I had worked a long day and didn’t really want to make a heavy starch like potatoes or rice. After bariatric surgery, I shouldn’t be eating those things anyway. But, I’m not the only person eating this meal, and I have active growing boys who need the carbs. So, I decided to combine my favorite caprese salad with another favorite, a panzanella salad.
Simply put, classic Panzanella is a tomato and stale bread salad. It was probably first made as a way to use up old bread, which is the main star of this salad. I remember when I first had it, I tried a panzanella recipe for a Thanksgiving feast this year. And it was delicious. I preferred it to my favorite stuffing recipe. It was so different and bright, really something over-the-top special.
And just to give it a little more oomph, I added avocado, because I love avocado. I could live on homemade guacamole and never be bored. The healthy fats really help keep things greased and moving in the body. Fat isn’t bad, as long as it is in moderation and the right kind.
The dressing was made with one of my favorite vinegars. It is locally made here in Utah, and if you can get your hands on it you will be addicted. Just dipping a piece of bread in it is just heaven. But made into a vinaigrette, and you will never want to buy homemade salad dressing again. Any good sweet vinegar will do, if I don’t have a honey wine vinegar on hand, I’ll just use balsamic. Also incredibly good.
And if we’re going to be honest, which I hope we always will be with one another, I ate more of the salad than I did of the steak I cooked. I only had two small cubes of bread, but enjoyed the bright and vibrant flavors that this salad brings. And I’m not the only one. A salad that should feed 8 had only 1 serving leftover at the end of the night. My husband and children each had a 2 servings, my youngest eating more salad than steak.
