Betraying Grandma’s No-Fail Rice Recipe – But I Know She’d Approve
Growing up, I only ever cooked rice the way my grandmother taught me. It was the “No Fail Rice” solution that never did fail. 2 cups water to 1 cup rice. Bring water to boil, add rice. Put the lid on, turn heat to low. Set timer for 20 minutes. When the timer goes off, take the rice off the heat, and allow to rest another 20 minutes. Do not remove the lid. When the second 20 minute timer goes off, remove the lid and fluff with a fork. Serve perfect rice.
When I got my Instant Pot, I was very resistant to the idea of cooking rice in it. I already had perfect rice, why would I cook it any other way? Then I tried it. I still prefer the texture of my grandmother’s recipe. It comes out a tad bit fluffier but the 27 minute time difference was enough to get me to use it. And then my fifteen year old decided to use it too.
Instant Pot Rice to the Rescue!
So when I needed to make some quick Coconut Rice for my Hawaiian Sweet and Sour Country Style Spare Ribs, I knew that the Instant Pot would make it easy and fast. And I was right. I increased the time under pressure by one minute because the first time there were still a few grains that were a bit chewy the first time I made it, though no one in my family complained.

And now, this is the only rice my son makes. I’ll wake up in the morning and find him dishing up some coconut rice with a little butter for breakfast. I make him eat some protein too, but I’m pleased that he’s making himself something he likes. And rice is cheap. So when he goes to college (I’ll be sending him with a rice cooker and a sous vide, cuz that’s the kind of mom I am), I know he won’t starve or gorge himself on Chicken Ramen like I did.
