It is fall. If you’ve been a long time follower of mine you know that from this season forward for months I’m pretty much frozen to death. The best part about the cold months is that different types of soups are in abundance. I love soup. I can never have enough soup. It warms me up, something that even layers of blankets and clothes often won’t do, and it also comforts me. Food is definitely a comfort and coping method for me, often too much so. But the warm fuzzies that I get from soup is a welcome addition each time I eat it.
Lasagna Soup – with or without noodles
I should not have carbohydrates. At all. Some carbohydrates are unavoidable. But, large amounts in things like bread and noodles can make me very sick. That’s one of the reasons I love this soup. I can hold back the noodles, and add them to the bread bowl for those who are eating carbs and leave them out of my porcelain bowl.
If you are like me, always looking to be a bit healthier and to lose or maintain weight, find adaptable recipes like this. You shouldn’t have to eat things different then your family. I admit that even with as sick as I get, sometimes I eat the carbs. This is my choice, and I’m trying to treat it more as a food allergy, but it is hard. All things in moderation though, because we must make a choice on what is more important to us.
Garlic Butter Bread Bowls
This… is an indulgence. To be very clear, the soups is great without this. I only do the bread bowls for special occasions. But, when I do… they are quite frankly delectable. Make sure to give them a try. I love garlic and if I have made some recently, will use Sous Vide Garlic Confit. SO GOOD!
Add more veggies
I like to add zucchini, corn (I love corn, but ugh – so many carbs) and anything that you want. Chunks of pumpkin or sweet potato would be SUPER good in this. I love to sauté spinach in garlic and the drippings of the sausage then add them. This soup is yours, make it what you want it.
