This Arizona girl does not like to be cold. And yet, here I am, living in a state whose motto is “Greatest Snow on Earth” and fall has definitely arrived to Utah. And it isn’t just cooling down, it is damp and grey most times. Add that to the isolation of working from home and I’ve got myself a case of the (almost) winter blues. Sweet Potato Chipotle Chili cures the winter blues, sweeping them away and warming you to your core.
October is the perfect month for chili. Growing up, there was always a chili cook-off at the church Halloween party. I didn’t go for the candy or the carnival games, I went for the chilis. There’s always the guy who just loads up the chili with the hottest peppers he can – no flavor, just heat. There’s the people who just go to Wendy’s and buy their chili. But I liked the middle of the road chili, heat with lots of flavor.
Sweet potatoes are nutritious, high in fiber (which keeps you full longer), and they are an excellent source of vitamin A (in the form of beta-carotene), vitamin C and potassium. They are also a decent source of many other vitamins and minerals. In comparison sweet potatoes have a lower glycemic index, are a better source of fiber, and provide similar or slightly higher levels of vitamins and minerals to regular potatoes.
Now that we’re done with the science stuff, let me just say that I love sweet potatoes. As I said above, they are good for you, but they are also super delicious. On days when I don’t want to cook – sometimes I just steam one in my Instant Pot for 10 minutes. A little butter and a sprinkle of salt and you can’t ask for a better treat. And the subtle sweetness can help me deal with cravings for sugary foods I can’t and don’t want to have. Yum!
They are brilliant in this chili. Chipotles really go hand in hand so well with sweet potatoes, as do the other seasonings. The sweetness marries so well with everything else – you REALLY have to try it.
Oh the Weather Outside is Frightful
But my chili is so delightful! No matter how cold it gets outside, food like this is what I look forward to most this time of the year. I guess it is how I get past the discomfort of the cold.
