Once a week, my husband and I like to keep our romance alive by going on a date. Though I tend prefer hole in the wall restaurants, sometimes we’ll head to The Cheesecake Factory for a lunch or dinner and a walk around the mall. I love a couple of items off the Skinnylicious menu – the Skinnylicious Grilled Salmon and the Tuscan Chicken. But, I knew I could make it better. So today, I present my Tuscan Chicken with Roasted Italian Salsa, a copycat Cheesecake Factory recipe.
I set about to make my own version, increasing the moisture of the meat, the flavor of the meat and keeping the amazing flavor of the salsa. Now I can’t stop making this. It reheats well, and I can cube it and add it to a frittata for a great breakfast. This recipe is one of my favorite of all time. I know you will enjoy it!
To Sous Vide or to Grill
I know not everyone has a sous vide. And even more, The Cheesecake Factory’s version is grilled. But, using the sous vide method produces a guaranteed juicier piece of meat. Pounding the meat to a thin and tender cutlet, marinading it in flavorful pesto and then cooking it in such a gentle and controlled manner guarantees quality. I can not eat dry meat – it gets stuck in my stomach, so this is a key issue for me.
Sous vide cooking allows precise temperature control and meat is tender and moist. It requires thinking ahead, because things take longer to cook, but you will never throw away food because it is overcooked again. If you are going to grill this chicken, watch it carefully. It is so thin, it will overcook quickly.
Homemade Pesto vs Store Bought
You can control the flavor of the pesto as well as the texture, but if you don’t have time to make your own – get a high quality pesto. My favorite jarred pesto is by Stonewall Kitchen Basil Pesto, and it will take 2 jars for this recipe.
If you are making your own pesto, I recommend the Fresh Basil Pesto Recipe over at Simply Recipes. It is delicious. I’m not a fan of pine nuts in anyway shape or form, and you can’t taste them.
Zoodles to Cut the Carbs
Cheesecake Factory serves their Tuscan Chicken with Farro. Zoodles are delicious and so good for you. I use the Kitchen-Aid Spiralizer attachment, but used to use the Spiralizer 5-Blade Vegetable Slicer. I’ll be posting a review on the Kitchen-Aid Spiralizer attachment very soon. Whatever tool you use, get yourself a spiralizer and find a new way to eat your vegetables.
