Sofrito is a flavorful sauce that is a base for many Latin dishes. I make it and then freeze it in 1 cup baggies, so that I always know exactly how much I have available and can just pull it out and defrost it when I need it. While many recipes will have different variations, all will have tomatoes, garlic, oil and onions. I like to add a diced jalapeno to mine to have a touch of spice. The sauce will keep for 5 days in the fridge or up to 6 months in the freezer.
